Impressive Italian Salad

Ingredients
  

Main Ingredients
  • 80 g Ready to eat Salami (or other Italian cold meats)
  • 400g tin Chickpeas
  • 1 Avocado
  • 1 Yellow Bell Pepper
  • 400 g Baby Plum Tomatoes
  • 200 g Pitted Green Olives
  • 1 Red Onion
  • 1 Romaine Lettuce
  • 140 g Sweet Mild Piquante Peppers
Dressing Ingredients
  • 6 tbsp Olive Oil
  • 3 tbsp White Wine Vinegar
  • 3 tbsp Lemon Juice (approx. 1/2 lemon)
  • 1 1/2 tsp Honey (runny honey is easiest)
  • 3/4 tsp Dijon Mustard
  • 1 1/2 tbsp Fresh Parsley
  • 1 1/2 tsp Oregano
  • 1 clove Garlic
  • 3/4 tsp Thyme
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

Method
 

  1. Mix the dressing ingredients together in a small bowl or a mug.
  2. Peel the avocado and remove the seed. Dice it into small chunks.
  3. Chop the yellow pepper into small chunks, removing the seeds and white from inside.
  4. Chop the baby plum tomatoes in half.
  5. Remove the top and bottom, and the outer skin from the red onion and dice into small pieces.
  6. Chop the romaine lettuce into thin slices.
  7. Chop the Piquante peppers into bite size pieces.
  8. Drain and rinse the chickpeas.
  9. Chop the salami into small pieces.
  10. Place all of the main ingredients into a large salad serving dish. Drizzle the dressing over everything.

Notes

You can mix the main ingredients together if you prefer, but I like the way it looks with the main ingredients separated. You can serve this alongside a main meal and it will feed six people. Or have as a packed lunch.
Once made, keep refrigerated in an airtight container and consume within two days.
For family members who can eat dairy, you can add Mozzarella to their portion.
