Don’t judge it until you’ve tried it. You’re really not going to believe how amazing this “ice cream” tastes, and just how easy it is to make! One ingredient, that’s all it takes to make this delicious milk alternative ice cream that’s free from dairy, gluten, soya and nuts.
For this recipe you need a good food processor. I use a Magimix 520XL food processor. Don’t underestimate how tough those bananas are to blitz once they’re frozen.

Banana Nice-Cream

- Remove the banana skins and chop each banana into disc pieces no more than 2cm (1") wide. Place all the banana pieces into a Tupperware and store in the freezer overnight, at least 8 hours.
- Place the frozen banana pieces into a food processor and blitz until it sticks. Remove the lid and stir the contents, then continue blitzing. You'll need to stir multiple times until it suddenly turns into a thick creamy texture. Make sure there are no lumps before removing it from the food processor. If you want to add additional ingredients as listed above, wait until the banana is creamy before adding them. Now it's ready to serve.

This dairy free ice cream doesn’t store well. Re-freezing it is not recommended so go ahead and eat it straight away. Don’t way long as it will quickly melt.

This ice cream alternative is also suitable for a paleo diet. Although I love this ice cream just as it is, there’s also an opportunity to add different flavours if you want to mix it up. One of the options I love is adding cacao powder and honey for a chocolate dairy free ice cream. I’ve also tried adding frozen fruits including mango, strawberries and raspberries to totally change the flavour. Or for a simple touch, just add some vanilla extract for a classic vanilla ice cream that’s dairy free.
You might wonder if it’s easier to blitz the bananas first, and then freeze them. Don’t try this. It doesn’t work that way round. The frozen bananas create a special creamy texture that can’t be achieved if you blitz them before freezing.
