Method
Make the Spice Paste
- Remove the skin from the garlic and crush it into a small mixing bowl.
- Remove the skin from the ginger and chop it as finely as possible. Add it to the mixing bowl.
- Add the remaining spice mix ingredients to the bowl and mix well, turning it into a paste.
Make the Curry
- Remove the skin from the onion and cut into half moon slices. Add to the pan with the oil and sauté on a low heat for a few minutes to soften the onion.
- Add the spice paste to the pan. Stir well and saute for a couple of minutes to bring out the flavour of the spices. If necessary, add 2tsp of water to stop the paste from sticking to the pan.
- Cut the chicken into bite sized pieces and add it to the pan, covering it in the spice paste mix and cooking until the chicken is thoroughly cooked. If necessary, add a little more water to prevent sticking.
- Add the coconut milk and stir well. Allow to simmer for 10-20 minutes. (Prepare the rice in the meantime).
Make the Rice
- Rinse the rice well under cold water. Add it to the pan of boiling water and simmer for the time stated on the packet. For jasmine rice this is usually 10-20 minutes. When finished, drain the rice and allow it to stand for a couple of minutes before serving. This helps it to fluff out.
