Ingredients

Spice Mix
  • 4 Garlic Cloves

  • 1 tsp Chipotle (or Gochugaru)
  • 1 1/2 tsp Medium Curry Powder
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1/2 tsp Coriander (Cilantro)
For the Curry
  • 1 tbsp Olive Oil
  • 2 Small Red Onions
  • 2 Large Chicken Breasts (approx 500g)
  • 1 tbsp Tomato Puree
  • 1 1/2 tbsp Honey
  • 1/4 cup Almond Milk
  • 4 Plums
To serve alongside
  • 300 grams Basmati Rice
  • 1 Broccoli

Method

Preparation
  1. Remove the skin from the garlic cloves. Crush them into a mug or small bowl. Add the spices and mix well.
  2. Remove the skins from the onions and cut into thin half moon slices.
  3. Remove the seed from the plums and cut them into small pieces, about 1x2cm. You can leave the skins on.
Cooking
  1. Heat the olive oil in a pan. Add the onions and cook on a medium heat until they are soft.
  2. Add the spice mix to the pan. Stir regularly. If it sticks, add a little water to the pan.
  3. Cut the chicken into bite sized pieces and add them to the pan. Cook until the chicken turns white.
  4. Add the tomato puree, honey, almond milk and plums to the pan and stir well. Cook for a further 15 minutes.
  5. Rinse the rice thoroughly. Place it in a pan with boiling water and cook for 12 minutes, or according to the pack instructions.
  6. Rinse the broccoli and steam for 10 minutes to serve alongside the meal.
