This is the best coronation chicken I’ve ever had, and it’s naturally gluten and dairy free. Even without dairy, it’s creamy and delicious. It makes a great high protein snack when you can’t quite last until lunch.

Cook the Chicken
- Put the chicken breasts in a pan of water. Bring the water to the boil and simmer for 1 hour. This will slow cook the chicken and ensure it falls apart easily.
Make the Spice Sauce
- Peel the skin from the mango and chop the usable part of the mango off the stone (this doesn't need to be neat).
- Put the mango in the food processor and blitz until there are no lumps. (If you don't have a food processor, you can try mashing your mango instead).
- Add the spices and mayonnaise to the food processor and blitz until it's well mixed.
- Transfer the spice sauce to a bowl and add the raisins.
- Remove the chicken from the water and pull it apart using a fork. Mix it in with the spice sauce, and your creamy coronation chicken is ready to eat.
Notes
This delicious coronation chicken can be eaten hot or cold. Keep it in an airtight container in the fridge and consume within two days.
